Viva!’s Guide to a Vegan Easter

With Easter only one week away, we’ve compiled our top tips on how to have a great vegan Easter.

With all pubs and restaurants closed because of coronavirus, we’ve picked our favourite Vegan Recipe Club recipes so you can still celebrate Easter with delicious vegan food without leaving the house.

Vegan Eggs Benedict

This vegan take on the classic recipe is the perfect way to start your Easter Sunday. Marinated tofu makes a tasty alternative to eggs and the hollandaise sauce will really remind you of this brunch dish. It’s a little more effort than most breakfast recipes but the results are definitely worth it.

Chestnut, Mushroom & Red Wine Pithivier

This vegan roast dinner is as beautiful to look at as it is to eat. A deliciously rich mushroom and chestnut filling is delicately enclosed with soft puff pastry to combine harmonious flavours and textures in this veganised french dish. You can even make it gluten-free by using gluten-free pastry. Pair with roast potatoes to have an amazing Sunday lunch without any animal products.

Blueberry & Whipped Cream Aquafaba Meringue Nests

If you’re new to vegan cooking, you might be thinking ‘what on earth is aquafaba?’Well, it’s that gooey liquid found in tinned beans such as chickpeas or butterbeans. Sounds weird, right?! But trust us on this one! It acts similarly to egg whites due to the high protein content, meaning you whisk it up to make meringues and a whole other range of goodies. Dollop on our delicious topping for a burst of flavour.
