After wowing the judges with his delicate and exquisitely produced patisserie items during the famous TV baking competition, Thibault broke free of his tradition – going vegan and launching a new plant-based patisserie in his home city of Cardiff.

Thibault is now leading the way in his industry – showing that the finest and most classic patisserie items can be made vegan – including his incredible range of Macarons.

Viva!’s Head of Comms, Faye Lewis, joins Helen to unravel some of the issues raised by Thibault, including how the professional chef industry is reacting to moves towards veganism and the challenges faced by being French and removing animal products from your diet.
