Around the World in 80 Ways: International
Veggie Recipes
It’s a wonderful world out there, with plenty of taste-bud tickling
goodies from its many countries – especially for a veggie! That’s
right; loads of the staple dishes eaten by the people on this planet
are veggie or easily adapted to make them so. So, when people hear
you’re a veggie and they ask ‘but what do you eat?’ you
can smile smugly and reel off: ‘Indian, Chinese, Italian, Thai,
Middle Eastern…’
Remember, if you want to find out more about world food, there are plenty
more international recipes in our Books For Life/ International Flavours section,
including French, Caribbean, Greek and North African.
Well-oiled
As well as different herbs, spices and condiments that give special
flavours to the meals of each region or country, cooking
oil also has an important part to play. You can of course just use ordinary
oil like vegetable or sunflower, but if your budget will stretch a bit
further, certain flavoured oils are a real treat. Good olive oil is at
the heart of most Mediterranean food (extra virgin being especially typical
of Italian), while Chinese and other oriental food often use sesame or
peanut oil. Indian food traditionally used ghee (made from butter or
a vegetable source) but these days often uses plain vegetable oil these
days as it’s
a little less heavy. And walnut or hazelnut oils are
to die for in a French style green salad!
